Protein Rum Balls

WHY stop celebrating just because they 25th has past? If you got a little too festive these holidays and ate your weight in seafood and pudding (like I did), you’ll be heading to the gym the moment it opens to start burning off your pot belly. Throw a couple of these protein rum balls in your bag to have before or after your work out. It’ll give you that “Yes, I’m eating rum balls while at the gym because I’m fucking fabulous” kinda look.

Don’t worry, these balls don’t have any actually rum in them.

Protein Rum Balls .1

Protein Rum Balls

Makes approximately 18 balls

What’s inside?
¾ cup oats, ground into a powder
¾ cup almond meal
¼ cup cocoa powder
½ cup desiccated coconut
1 ½ tbsp peanut butter
¾ scoop chocolate protein powder
2 ½ tbsp rum essence
2 tbsp coconut oil, melted
1 tbsp honey/rice bran syrup/sweetener
1 tsp vanilla essence
Extra desiccated coconut or chocolate sprinkles for coating

To make:

Combine all ingredients (bar the extra coconut and sprinkles) in a bowl and mix to form a dough-like consistency. If you feel the mix is too dry, add more coconut oil, honey or peanut butter, or if too wet, add more almond meal or ground oats. Using the palm of your hand, mould mixture into balls, roll in coconut or sprinkles and set on a tray. Once all balls have been formed, place tray in the fridge or freezer to all them to harden. Store in a jar or airtight container in the fridge.
