Andrea’s Love: White Christmas

THAT time is getting a whole lot closer, when the jolly fat man shimmies down your chimney and brings you presents and surprises and happiness.

My favourite part of Christmas has to be watching people get excessively drunk at work parties and doing things they regret, as well as inhaling the surplus of delicious food available. Soon you will be as fat as Kris Kringle himself, but it’s Christmas! Who’s going to judge? No one!

…That is until next year, of course. Don’t worry; dieting can be your new year’s resolution.

White Christmas is a popular dessert for this festive season, but if getting a little chubby is not on your wish list, make it a little healthier with this recipe.

White Christmas
Makes 24 squares

What’s inside?
2 cups puffed rice
250g white chocolate buttons
200g coconut oil
½ cup shredded coconut
½ cup dried cranberries
½ cup pistachios, chopped

To make:

In a bowl, combine puffed rice, coconut, cranberries, and pistachios and mix to combine. In a separate bowl, microwave the white chocolate buttons for approximately 45 seconds, stirring every 15 seconds, until they have melted.  Stir in coconut oil until completely melted through. Pour chocolate mix over the puffed rice mix and use a spoon to mix until evenly coated. In a baking paper lined tray, pour in mixture and press into sides. Smooth and press down the top using the back of a spoon. Place tray in fridge or freezer until slice has hardened, cut into squares and enjoy.

Slice must be kept in fridge or freezer for storage, or it will melt.
