Andrea’s Love: White Chocolate Macadamia Cookies

FOR me, when it rains, I always get an urge to bake all of the things. Cookies are incredibly simple to whip up, fairly cheap when it comes to buying ingredients, and a guaranteed crowd pleaser.

These white chocolate and macadamia variety are definitely not an all day, every day option, however there’s no harm in enjoying one every so often. It’s pretty difficult to stop at one though, so be prepared.

This simple cookie recipe can be changed and altered to suit your taste and mood, for the classic variety, use milk chocolate chips and omit the nuts, or use one and a half cups of self raising flour with a quarter cup of baking cocoa for rich double chocolate cookies. You could also substitute a little bit of the butter for some peanut butter or experiment with other kinds of nuts or dried fruit.

White Chocolate Macadamia Cookies
Makes 12-14 cookies

What’s inside?

125g butter, softened
¾ brown sugar
1 egg
1 ¾ cup self raising flour
150g white chocolate chips
100g macadamia nuts, roughly chopped

To make:
Preheat your oven to 160ºC, and line 2 trays with baking paper.

In a bowl, beat the sugar and the butter until pale and creamy. Add in the egg and whisk until it is incorporated.

Sift in the flour, and mix through until soft cookie dough is formed.

Finally, add in the chocolate chips and macadamia nuts and mix until distributed throughout.

Bake for approximately 15 minutes. Remove and place on a wire rack to cool, before serving.
