Brownies with Chickpeas in Them? Whaaaaaaat!?

The most interesting part of creating healthier versions of classically indulgent meals is the random ingredients you can use to reproduce a similar taste and texture.

Date caramel? Whipped coconut cream? Cashew cheese?

I read these recipes with a perpetual frown as I try to imagine how you could possibly make a bar snack into a dairy product.

It is a shock to the tastebuds when you have used ingredients a little left-of-centre to produce the familiar flavour of your favourite foods.

Brownies with chickpeas in them? Whaaaaaaat!?

Chocolate Brownies

Makes approximately 9 squares

1x 400g can chickpeas, drained and rinsed

3 egg whites
1 tbsp unsweetened cocoa powder
100g dark chocolate chips
½ tsp coconut oil
3 tbsp oats
2 tbsp applesauce
1 tbsp honey
½ tsp baking powder
¼ tsp salt

Preheat oven to 180°C.

In a food processor, combine chickpeas, egg whites, cocoa powder, oats, applesauce, honey and baking powder and whiz until smooth.

In a small bowl, microwave chocolate chips and coconut oil until melted and add to the food processor. Whiz again to combine.

Pour mixture into a small baking paper-lined tray and smooth the top over.

Bake for 35 minutes. Insert a metal skewer – if it comes out clean the brownie is ready; otherwise bake further in 10-minute increments until cooked.

Leave to cool, slice into squares and enjoy!
