Andrea’s Love: Stovetop Gingerbread Granola

CHRISTMAS time means festivities. Festivities left, right, and centre. Stores haul all their normal products in favour of replacing them with anything red and green. Don’t bother trying to buy a normal bowl this time of year; you can only purchase one with a giant Santa face sprawled across it. Did you need a doorstop for your door? Oh sorry, we only have ones in the shape of reindeer.

Keeping with this tradition, you can’t eat regular food this month; it’s gotta have some sort of festive flare! Wake up in the morning to gingerbread granola. The great thing about this recipe is that it’s done on the stovetop rather than in the oven (however if you prefer to bake it, go ahead). Stovetop granolas are incredibly easy to make, and are perfect if you want to make small serves. 


Stovetop Gingerbread Granola
Makes a single serve

What’s inside?
½ cup oats
¼ cup almonds, chopped
1 tbsp coconut oil
1 tbsp honey
1 ½ tsp ground ginger
1 tsp cinnamon
½ tsp ground nutmeg
½ tsp ground cloves

To make:

In a pan heat oats, stirring frequently for approximately 5-10 minutes until partly toasted. Add chopped almonds and continue stirring, allowing the nuts to toast as well. Spoon over coconut oil and honey as well as all the spices and stir through. Remove from heat and pour into a bowl. Serve with milk or yoghurt.
